Cookies and Cream Mini Cupcakes


You Will Need:

– 20 Oreo Cookies

– 1 Package Chocolate Cake Mix ( I used Devils Food Cake)

– Water, vegetable oil and eggs (as cake box recipe calls for)

– 8 Ounces Softened Cream Cheese

– 3 3/4 cups powdered sugar

– 1 stick butter (room temperature)

– 1 teaspoon vanilla extract

– Mini Cupcake Liners (from your August box)

– Mini cupcake pan


-Preheat oven according to box directions

-Roughly chop Oreo cookies.  To make it a little easier and mess free, I put cookies in a large zip lock bag and crushed with hands or hit with a large spoon to crush cookies, or you can use a food processor!

-Line cupcake pan with mini cupcake liners

-Mix cake mix according to directions on box, once mixed, fold in about half of the crushed Oreo cookies

-Fill cupcake liners about 2/3 of the way full with mix

-Bake cupcakes according to package directions

For Frosting-

-Cream together butter and cream cheese with a mixer

-Once mixed, add the vanilla and slowly add powdered sugar a little at a time until all blended

-Fold in the remaining chopped Oreos

-Let cupcakes cool and pipe frosting onto cupcakes.  Can’t get enough Oreos?  I added more on top of the frosting!  Enjoy!!!  My kids love these!!!
