Banana Nut Muffins


I had some very overripe bananas that were about to be too ripe so I decided to make some Banana Nut Muffins.  My boys loved these!!  Perfect for a quick breakfast or a snack!


You will need:

~1 1/2 cups all purpose flour, plus 2 tablespoons for topping

~3/4 cup sugar

~1/2 teaspoon salt

~1 teaspoon baking powder

~1 teaspoon baking soda

~1/4 cup chopped walnuts

~1 egg

~1/3 cup melted butter

~1/3 cup brown sugar

~3 bananas

~1 teaspoon cinnamon

~1 tablespoon butter

Preheat oven to 375 degrees.  Line muffin tin with liners.  In a large bowl, mix together 1 1/2 cups flour, baking powder, baking soda and salt and set aside.  In another bowl, mash 3 bananas.  Lightly beat egg, mix with bananas, sugar and melted butter.  Stir the banana mixture into flour mixture, fold in chopped walnuts.  Fill muffin cups until 3/4 full, set aside.  In a small bowl, mix together 2 tablespoons flour, brown sugar and cinnamon.  Cut in 1 tablespoon butter until mixture looks like coarse crumbs.  Add mixture to top of muffins.  Bake 18-20 minutes.  Muffins are done when a toothpick inserted in middle comes out clean.
